To make gravy you can add a few more vegetables according to your wish and taste of your tongue. There are several colors of gravy like if you are using less tomato then gravy will be in orange color and on the other hand if you are using cream and some other veggies then it will turn its color according to them.

Ingredients for Koftas –
- 1 cup grated Cheese
- 2 boiled Potatoes
- 1 tablespoon finely chopped Cashew Nuts
- 3 tablespoons of Cornflour
- 1 quarter big tablespoon of Garam Masala Powder
- Raisins as per requirement
- A half tablespoon of Red chili powder
- The salt according to taste
Ingredients for Make Gravy for Malai Kofta –
- 2 large Onion
- 3 Tomato
- 1 big tablespoon paste of Ginger Garlic
- 2 tablespoons of Red chili powder
- 1 Sharp address
- 1 half slice of Lentil sugar
- 2 Cardamoms
- 3 Cloves
- 1 teaspoon of Kasuri Fenugreek (Kasuri Methi)
- A half teaspoon of Garam Masala Powder
- 2 tablespoons of Coriander leaves
- 2 tablespoons of Cream
- A quarter cup of Cashew paste
- Oil as per requirement
- The salt according to taste
- A half spoon of Turmeric powder
Step by Step Process for Making Malai Kofta or Recipe of Malai Kofta –
Step 1 – Put all the boiled potatoes in a bowl and mashed them with the help of potato masher or with your hands.
Step 2 – Now add grated cheese, potato, red chili powder, garam masala powder, raisins, finely chopped cashew nuts, and cornflour in a separate bowl and prepare a mixture by mixing it well.
Step 3 – Now prepare small balls of the prepared mixture in the round shape. (Note: you can also pour little oil on your hands to make smooth balls for Malai Kofta.)
Step 4 – Now put some oil in a pan and keep that container on gas for heating on a medium flame. (Note: First keep a napkin paper on a plate, or if you are running out of napkin paper then you can also utilize newspaper or anything else that will soak all the excess oil from the koftas).

Step 5 – When the oil gets enough heated, then add 3 to 4 koftas (according to the size of the container if more than 3 or 4 koftas can be fried then you can also add more) in the pan and let them get turn golden brown. (Note: During the time of frying Kofta, keep stirring the kofta with the help of ladle to prevent them from over-frying)
Step 6 – In the same way, the rest of the koftas also should be fried. And then all the koftas are ready then close the gas stove off.
Step 7 – Now it is the time to make gravy as we have prepared koftas. To make delicious gravy first you need to grind the tomatoes and onion separately. And prepare a paste of both the things separately.
Step 8 – Then again put some oil in a pan and keep the pan on the gas for heating.
Step 9 – After a few minutes of waiting when the oil becomes hot add lentil sugar, cardamoms, cloves, cinnamon to the oil and fry it for some time.
Step 10 – Pick the prepared paste of onion and add it to the oil and cook for some time until the onion turns its color to golden brown.
Step 11 – When the onion looks roasted then add the paste of ginger and garlic to the mixture of onion and other ingredients and cook it for 4 to 5 minutes.
Step 12 – When all the spices start leaving the oil, add the paste of tomato puree in the gravy and cook for 3 to 4 minutes. Keep stirring the mixture well to prevent it from overburning.
Step 13 – Now add cashew paste, garam masala powder, red chili powder, and turmeric into the gravy and cook for some few more minutes.
Step 14 – When the gravy is roasted, add 2 cups of water and cook for 10 minutes on a low flame.

Step 15 – After this add salt according to your taste and Kasuri fenugreek (Kasuri Methi) and mix it well.
Tip – Before adding kasuri fenugreek to the gravy you can also roast it. To roast Kasuri Fenugreek, you need to put a griddle on a low flame gas and then when the griddles turn hot then spread Kasuri fenugreek over it, and when it turns little golden brown, turn gas off and put this roasted Kasuri fenugreek in the gravy. It will help to enhance the taste of a dish to some extent.
Step 16 – Now put the prepared Koftas in the gravy.
Step 17 – 1. Mix the koftas in the gravy and stir lightly and turn the gas off.
Step 18 – Your Malai Kofta is ready to be served. Serve it hot and for its garnishing, you can pour coriander leaves or roasted Kasuri fenugreek over it.
